Bigoli with fresh tuna and lake sardines: sauté the fresh tuna with extra virgin olive oil and garlic, drizzle with white wine, add tomato sauce, oregano, salt and pepper and mix well with the bigoli cooked in lightly salted water. Serve garnished with two or three salted lake sardine fillets.
Mixed fry of lake fish: clean the sardines, chub, eel and whitefish and slice them into small fillets. Coat them in breadcrumbs and flour (in equal quantities) and fry at 180 degrees. Garnish with lemon.
Smoked whitefish salad: add flakes of smoked lake whitefish to fresh mixed salad leaves, dress with olive oil, chopped olives and cherry tomatoes, salt and pepper.
